Vegan Pumpkin Ice Cream

Ingredients

1 can vegan condensed coconut milk 7.4 ounces
1 tablespoon vegan powdered egg mix
1 can coconut cream 13.5 ounces
3 cups soy creamer
3/4 cup organic date sugar
1/4 teaspoon salt
1 tablespoon vanilla extract
1 can pumpkin
1 tablespoon pumpkin pie spice

Directions

Mix all of the ingredients together with a vitamix or in a large bowl with a wire whisk. Let sit in the refrigerator, covered for 2 to 6 hours to develop flavor. Then make ice cream per the instructions on you ice cream machine. It will still be soft when coming out of the machine, so let it harden some more in a covered bowl in the freezer.
