Soak cashews in water for at least 1 hour.  If pressed for time, heat the cashews and water in a microwave for 1 minute.  Drain cashews.

  • 1 1/2 cups soaked cashews
  • Water to soak nuts, preferably filtered by reverse osmosis
  • 1 1/2 cups plant-based milk
  • 2 cloves garlic
  • 1/2 small onion, finely diced
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons miso
  • 2 teaspoons dried dill (or to taste)
  • 1/2 teaspoon freshly ground black pepper
  • Optional – 1/8 teaspoon cayenne pepper (or to taste)

Put cashews and all other ingredients into a high-speed blender, such as a Vitamix and blend on high speed for 1 minute. Add more nut milk if the mixture is too stiff. Scrap bowl with plunger during blending to ensure that ingredients are mixed well.  Adjust seasoning to taste.
