Ingredients

1 cup raw sunflower seeds
3/4 cup water
1 tablespoons lemon juice
1/3 to 1/2 cup nutritional yeast

This is based on Matthew Kenney’s recipe in the book Plantlab. The recipe is in the Plant Burger recipe in that book and it is really delicious.

Soak sunflower seeds in room temperature water overnight or in hot water for at least 30 minutes. Drain the seeds if soaking. Put drained, soaked seeds with fresh water and other ingredients in a blender until smooth. You can skip the soaking if you have a high speed blender such as the VitaMix. Blend until smooth and no nut fragments remain. The cheddar should have a creamy consistency.
